Cucumber salads are wonderful to have with meals that have some spice to them. The hotter the dish the nicer it is to have a cool refreshing salad.
It is also important that this salad be served right away. If it is left too long the cucumbers will lose their beautiful crispness.
1 English cucumber, peeled, halved lengthwise and cut into 1/8 inch slices. If you can’t find an English Cucumber just use a couple of the everyday cucumbers that are very easy to find.
2 scallions, chopped
2 cloves garlic minced
1/2 teaspoon fresh ginger minced
1/2 teaspoon Himalayan Sea Salt
1/8 teaspoon cayenne
Pinch turbinado sugar or other natural sweetner. A couple of pinches if you would like your salad a bit sweeter.
3 or 4 tablespoons rice vinegar
Place the sliced cucumber or cucumbers in a bowl. Add the scallions, garlic, ginger, salt, cayenne, sugar and vinegar. Mix well, cover and chill before serving.
